I love brunch. Breakfast foods are my favorite types of food, so the idea of eating SO MUCH of it that you eat enough to qualify as two meals, makes me very very happy. This past Sunday, my roomie/bff/angel from heaven, fixed the brunch of the century. Sweet potato pancakes! Here is the recipe:
makes 1 serving
1/3 cup mashed sweet potato
1 tbsp honey
1/2 tsp baking powder
pinch of salt
Mix all the ingredients together well.
Cook in the skillet for about 2 minutes on each side. Be careful when you flip! They are delicate!
I made the mimosas, which means there was ZERO math and measuring involved. My recipe: Fill a champagne flute with champagne, peach nectar juice, and grapefruit juice in whatever ratio suits you. My recipes are like snowflakes, no two are ever the same.
